The Ataulfo is a high quality, smaller mango. It comes from Mexico and is highly available from February to August. Small volumes are available from September to February from Brazil, Ecuador and Peru. The Ataulfo has canary yellow skin, and is a small sigmoid shaped mango that weighs 6-8 ounces. The flesh is fiber-free, firm, and handling resistant. It has a distinctive sweet and spicy taste and a buttery flesh that make it a true delicacy.
